Miyabi knives are made by Zwilling Japan in the Japanese knife capital Seki. You get the best of both worlds: German engineers and Japanese craftsmen - together they stand for outstanding durability and the sharpest edges. It takes as many as 100 steps and 42 days to make a knife Miyabi-worthy. That's what it takes to get a fantastic knife! Each Miyabi collection is of excellent quality, and mostly differ in terms of steel type and handle material. So feel free to base your choice entirely on the knife's looks! Miyabi 5000MCD 67 series

The Miyabi 5000MCD 67 collection combines magnificent design with high-quality materials. The knives in this series are made of 132-layer damascus steel surrounding a core layer of MC66 powder steel. These damascus layers give the series its unique markings that are clearly visible on the matted blade. The handle is made of unique Black Ash Wood. A dark type of wood with wild markings and almost golden accents. The steel has been ice-hardened at -196 degrees Celsius to achieve extreme hardness. Finally, the Japanese knives are manually sharpened in the traditional Honbazuke method.

Miyabi 5000MCD series

Timeless beauty and sharpness are united in the 5000MCD series. This collection features a stunning traditional, D-shaped handle made from Masur birch wood. Also known as curly birch. The handle is perfectly balanced, thus ensuring you'll be able to effortlessly cut ingredients for hours at a time. A nice detail about this series is the mosaic pin of the handle in combination with the polished finish of the blade. The knife has been hand sharpened on both sides and then stropped according to the traditional Honbazuke sharpening method.

Miyabi 7000D series

The Miyabi 7000D collection combines magnificent design with high-quality materials. The blade has a satin finish. As a result, the markings of the damascus steel are very subtle. The beauty of the blade is the result of 64 layers of damascus steel, consisting of two different steels that are mixed together. In between these decorative layers is a rock-solid core of CMV60 powder steel. A special Friodur ice-hardening process means that the blades are extremely robust, with a hardness of 60 HRC. The blade has been symmetrically sharpened according to the traditional Japanese Honbazuke method. During this process each knife is sharpened and stropped by hand in three phases. This makes the blade super sharp, and the hardness of each knife means that this sharpness is retained for a long time.

Miyabi 5000FCD series

The Miyabi 5000FCD collection combines magnificent design with high-quality materials. The knives have a FC61 core, surrounded by 48 layers of damascus steel. A special Friodur ice-hardening process means that the blades are extremely robust, with a hardness of 61 HRC. The blade has a matt finish that makes the markings of the damascus steel really stand out. The blade has been symmetrically sharpened according to the traditional Japanese Honbazuke method. During this process each knife is sharpened and stropped by hand in three phases. This makes the blade super sharp, and the hardness of each knife means that this sharpness is retained for a long time.
