## About Lion Sabatier Fuso Nitro+ knives


Lion Sabatier knives are a unique collection of Sabatier knives because Sabatier chose to make the Fuso Nitro+ knives from nitrogen-hardened Sandvik 14C28N steel. As a result the knives were left with a hardness which is, for Sabatier’s standards, remarkably high, at least 60 HRC! This hardness is perfect for maintaining the sharpness of the blade. Ideal when you aren’t looking forward to sharpening your blade on a regular basis.


The knives from the Fuso Nitro+ collection were grinded under an impressively small grinding angle. This makes each knife razor sharp and perfect to work with! The handle is slightly rougher than the blade and offers you enough grip. The Fuso Nitro+ collection is a very beautiful addition to Sabatier’s existing collections!


**Tip:** clean the knives by hand to prevent the metal from damaging!

Preis-Leist.-Verhältnis: gut (bezogen auf Design u. Stahl)
Techn. Qualität: hervorragend. Absolut nahtlos. Saubere Fertigung.

Wichtig waren: Funktion, Form, Stahl, Härte/Schnitthaltigkeit/erreichbare Schärfe.
Der Hersteller war für mich unwichtig (Sabatier war früher für hochwertige, überteuerte Küchenmesser bekannt).

o Verwendung: kleines "Gemüsemesser" für die typischen Küchenarbeiten.

o Einsatz: täglich mehrfach ; seit inzw. ca. 7 Wochen.
Wird immer pfleglich behandelt - Holz-Schneidunterlage ; immer kurz unter fl. Wasser abgespült (Spülmaschine völlig überflüssig und aus Prinzip sowieso nie).
Kann daher Korrosionsbeständigkeit (Lebensmittel-Säuren, Spülmaschine) 
*nicht* beurteilen - 14C28N sollte hier völlig problemlos sein.

o Das Fuso hat eine sehr spezielle, untypische Form: Ein völlig glatter, 
nahtloser Korpus wie aus einem Stück, ein voluminös u. massiv wirkender Griff, 
"ultramodernes" Design, Klingenform seeehr spitz zulaufend.
Man muß dies mögen und die passenden Arbeiten damit machen 
(habe bemerkt, daß ich meine anderen beiden Office- u. Gemüsemesser tatsächlich nicht mehr benutze).

o Gewicht: 81 g (gemessen). Ist leichter als es von der massiven Optik her wirkt.

o Gute Handlage, für meine (kleinen) Hände fast voluminös, griffig genug (obwohl glatt), längeres Arbeiten problemlos.
Der Schwerpunkt liegt bauart-bedingt relativ weit hinten im Griff (vom Griffende her bei 1/3 der 21 cm Gesamtlänge).
Bauart-bedingt unvermeidbar ist daß beim "normalen" Greifen natürlich 
Zeige- u. Mittelfinger im Weg sind (unter dem Griff Nähe Ricasso 
ist halt kein Platz, wie z.B. bei einem Santoku).

Reine Geschmackssache: 
Beim Schneiden "gegen den Daumen" ist mir persönl. die Schneide zu hoch (22 mm am Ricasso).
Beim Halten "Ricasso zwischen Daumern u. Zeigefinger" stört mich die Hecklastigkeit etwas.

o Messerstahl: 14C28N - sehr fein, korrisionsfest, recht hoch härtbar ; 
wird typischerweise  bei hochwertigen EDC-/Taschenmessern benutzt 
(habe mehrere mit 12C27 u. dem neueren 14C28N) ; 
ist weitaus besser als typische Küchenmesser-Stähle (dort wäre höchstens D2 vergleichbar).

o Klingenlänge: 9.5 cm (9.8 gemessen)
o Klingenstärke: 1.5 mm (1.7 bis 0.6 gemessen Nähe Ricasso bzw. Spitze), trotzdem recht steif.

o Schleifwinkel: 13 Grad - gut, sehr schneidfreudig.
o Härte: ist mit ca. 60 HRC angegeben.
o Schnitthaltigkeit: gut. 
o Schärfe: War ab Werk recht scharf abgezogen. Ist relativ fein ausschleifbar.
Habe erst nach ca. 5 Wochen (obwohl überflüssig, rein aus Neugier) ein wenig nachgeschliffen (problemlos ; ausschließlich mit Polierpaste "extra fein" auf Streichriemen ; ein 3000/6000er Wasserstein oder 2000er Keramik-Stab wären ziemlich übertrieben).

Härte, erreichbare Schärfe etc. sind aber nicht so hart/heftig-knackig 
wie ein "japanesischer" Mehrlagen-Stahl mit VG10-/AUS10-Kern.
