This Tojiro Shippu peeling knife features a blade made from 37-layered stainless damascus steel with a core of VG10 steel. This is less than the 63 layers we're used to seeing from other knives in this collection. That's the result of a smaller blade. The blade still enjoys the advantages of the layered steel. This combination of different steel types provides unparalleled hardness and corrosion resistance, allowing the knife to remain exceptionally sharp for a long time.

## Tojiro Shippu handle

The Wa-style handle is made of magnolia wood with a bolster made of chic buffalo horn. The handle has an asymmetrical shape which makes the knife mostly suited for right-handed use.
