The **Eden Sugoi Olive nakiri** is a very recognizable, typically Japanese vegetable knife. The nakiri can be found in almost any Japanese kitchen. You can recognize the knife from its rectangular blade. You can also cut vegetables easily and very precisely from a vertical angle with this knife, as its tip is slightly rounded. You use a nakiri to effortlessly cut carrots, cucumber, cabbage and many other types of vegetables. You can also use it finely chop herbs. The nakiri comes in a nice wooden storage box.

## Eden Sugoi Olive collection

The knives from the Eden Sugoi Olive collection are the basis for any lover of Japanese-style knives. With these knives you can carry out any task in the kitchen! They are incredibly versatile knives that can cut meat, fish and vegetables. ## The blade

The blade is made from VG10 steel with a hardness of 58-60 HRC. It is a stainless type of steel with a relatively high carbon content. This means that VG10 steel is a lot harder than most stainless types of steel. As such the edge of the knife is sharper than European knives and it retains its sharpness longer. VG10 steel is known for the fact that is easy to sharpen than, for instance, a Japanese knife made from carbon steel. This is the result of the molecular construction of the steel. We can talk about it for hours, but we won't. The blade of the nakiri is enhanced with a damascus finish. As such the knife looks amazing. Appearance, after all, also matters! 

The nakiri from the Sugoi Olive collection is not enhanced with a crop. The advantage is that you can use the entire blade when you use the knife. In addition, the knife is easy to sharpen because the crop won't get in the way as you sharpen from [heel to edge](/en/ct/anatomy-kitchen-knife.htm).

## Maintaining your new nakiri

If you properly [maintain your new nakiri](/en/ct/maintaining-a-kitchen-knife.htm) you can enjoy it for years! Like most kitchen knives, the knives from the Sugoi Olive collection are not dishwasher proof. If you put them in the dishwasher you will notice soon enough that the olive wood will be affected by the dishwasher.

It is the result of a combination of the harsh detergent, the heat and the fact that the blades stay damp too long in the dishwasher. As such you damage the wooden handle and the blade can start to rust. It is best to wash and dry the nakiri by hand immediately after use. To make sure the olive wood stays in great shape you add oil to the handle.

Dit mes is keihard. Snijd als een warm mes door boter (echt vlijmscherp). Verrassend lichtgewicht, mooi afgewerkt lemmet en olijfhouten heft voelt kwalitatief aan. Kookplezier toch zeker met een aantal procentpunten toegenomen. Kost wat maar daar beleef je ook veel plezier aan kortom een absolute aanrader. 

Een uitje snipperen, knoflook, gember, witte kool. Hiermee doe je dat met gemak en plezier. Een aanvulling voor je kookkunsten. Daarbij een schraper gekregen, zoals van Duikelman. Om je fijn gesneden groente in de pan te schuiven, maar ook om je mes schoon te schrapen. Want ben voorzichtig, Het mes is gruwelijk scherp.

Ik ben helemaal weg van de Eden Sugoi Olive 2090-116 Nakiri. Dit mes heeft niet alleen mijn dagelijkse kookervaring verbeterd, maar heeft mij ook op een geheel nieuw niveau van waardering voor kwaliteitsgereedschappen in de keuken gebracht. 

Laten we beginnen met het ontwerp. De 17cm lange Nakiri-kling is onberispelijk. De strakke, rechte rand, die perfect is voor het hakken van groenten en fruit, wordt gecompenseerd door het stijlvolle olijfhouten handvat. Dit zorgt niet alleen voor een esthetisch aantrekkelijk mes, maar draagt ook bij aan de algemene functionaliteit. 

Het mes ligt uitzonderlijk goed in de hand. De zorgvuldige balans tussen het blad en het handvat maakt het zwaaien met dit mes bijna moeiteloos. Het voelt comfortabel en veilig aan, waardoor ik met veel vertrouwen kan snijden, hakken en dobbelen. 

En dan is er de scherpte. Dit mes is gewoonweg ongelooflijk scherp, waardoor het snijden van ingrediënten zo soepel en nauwkeurig mogelijk verloopt. Van harde groenten tot zachte fruitsoorten, niets biedt weerstand tegen dit uitzonderlijk scherpe mes. Het heeft mijn voorbereidingstijd drastisch verkort en me in staat gesteld om meer gedetailleerd te werken dan ooit tevoren.

Het onderhoud van dit mes is ook heel eenvoudig. Het blijft langer scherp dan de meeste messen die ik in het verleden heb gebruikt, en zelfs na intensief gebruik blijft de kwaliteit behouden. 

Ik kan de Eden Sugoi Olive 2090-116 Nakiri van harte aanbevelen aan elke thuischef of professional die zijn kookervaring wil verbeteren.
